Back to School Gummies.

January 4, 2022

with the Gut Fix Mummy.

Following on from my lunch box blog I wanted to include a recipe for one of my favourite snacks for my little’s lunch box.

These gummies are made with Grass Fed Gelatin. It’s a little different from the gelatin you find at the supermarket although it has the same effect – it sets like jelly or lollies BUT with nutritional benefits you will love.

Grass Fed Gelatin is available at the Noosa Health Store at Noosa Civic. 100% natural grass-fed gelatin is extracted from the bones and connective tissue of cows. It’s high in protein which is an essential macronutrient and found in virtually every part of the body. Protein is made up of amino acids, some the body can make itself and others that must be obtained from the food we eat. Protein is essential for the growth of all organ systems including bones and muscles and therefore vital for our kids during the years they are growing rapidly. They need to eat protein-rich foods such as lean meat, poultry, fish, eggs, tofu, nuts, seeds and legumes/beans every day.

Gelatin comes in a tasteless powder which dissolves in warm liquid and sets when cooled. You can find all sorts of fun gummy/ice cube moulds at House in Noosa civic.

Mangoes are full of vitamin c which helps the body absorb iron, supports the immune system and promotes cell repair. Have a go at these mango gummies while they’re in season:

Ingredients:

1 cup mango flesh

½ cup of water

Juice of ½ lime

4 tbsp gelatin

Stove top version

Blend mango, water and lime juice

Pour into a pan, sprinkle gelatin over the surface and leave for a few minutes to bloom

Heat over a low heat whilst whisking

Once gelatin is dissolved pour into moulds and set in the fridge.

Thermomix version

Blend mango, water and lime juice 10 secs, speed 8.

Scrape down sides and sprinkle gelatin avoiding the blades.

Heat – 4 mins, 55 degree’s, speed 3

Pour into molds

I hope you enjoy this super simple recipe. Stick to this basic formula and have a play with your favourite flavours. Think berry, apple, even creamy gummies with coconut milk and carob. The flavour combinations are endless.
